Strawberry Rhubarb Tiki Daiquiri


I’ve been on vacation from creating new cocktails for a few weeks, but I am back with one of my favourite early summer tastes – strawberry and rhubarb!

2 oz white rum
1 oz crushed strawberries (cleaned and hulled)
1 oz homemade rhubarb syrup or rhubarb drink concentrate (SAFT RABARBER from IKEA)
1/2 oz fresh lime juice
3 or 4 drops Bittermen’s Elemakule Tiki bitters

Shake well with ice and fine strain into cocktail glass. Serve with ice.

Mango Blush Daiquiri


This seems like a very long winter, and it’s not over yet! A sunny cocktail is required.

2 1/2 oz Ataulfo mango purée (mangos should be nicely ripe. Whirr in food processor and press through a sieve)
2 oz white rum
1/2 oz lime juice
1/2 oz vanilla syrup
2 drops Peychaud’s bitters

Shake well over ice and strain into a cocktail glass. Add two more drops of Peychaud’s on top.

Soul syrup cocktail


Rooh afza is a sweet syrup used in India and Pakistan to flavour sorbets, cold drinks and desserts. The name means “that which nourishes the soul” in Urdu. It has a faintly piney, rosy aroma and flavour. I have been experimenting with adding a small amount to summer cocktails. Although it is not normally mixed with alcohol, it seems to work.

2 oz pineapple juice
11/2 oz white rum
1/4 oz rooh afza
